That's exactly what I did. I also made the cockpit-area forms a bit taller to accommodate my big feet, and give me a bit more storage immediately aft of the cockpit.
I'm 6'-6", 185--so there! I'll let you know how well the design works at 18' as soon as I get it in the water in 2 weeks or so. Kent LeBoutillier stretched a Guillemot, and had it in the water for the first time this past weekend--he said he loves it.
