I too had that problem when I built a canoe last winter ... I bought strips pre-milled by another amateur, and the coves were too shallow. Consequently, there was a slight indentation because the cove wouldn't take the entire bead. This was made worse by the fact that the coves didn't go right to the edges of the strip, so there were often thin flat spots along the cove edges. (I'll know better next time). I was afraid to sand too much, lest I make my strips too thin, so, in some cases I had to leave a slight indent. Most were maybe 1/32" I guess.
The epoxy filled them all. Many hours of worry ( this story is actually very long due to the steps I took to solve my problem ... none of which were necessary ....) proved pointless. The hull is very flat.
