I think the 1 gallon kit will not be enough - you want atleast 1.5 gallons total. It is especially tough to use the minimum amount of epoxy on your first kayak since you are learning how to apply glass etc.

The guillimot 17 requires about 17+17 ft for the hull and the same for the deck. making about 70 feet total. you may be able to get enough cloth out of very wide glass to only require about half this though. you still need cloth for reinforcement and coaming etc. as well.

get Nicks book as it outlines all the above. his plans also outline it as well. they have all the material requirements needed. the book covers all construction techniques that will help out duiring construction. pictures are good in it as well.
