You should wait quite a while before applying any finish - see your epoxy instructions - some recommend over a month waiting period. I have seen several posts here stating that limited use in the interim period is not a problem, The wood may change color to some extent from UV rays (tanning), but epoxy typically can handle a couple weeks to a month of steady UV exposure before beginning to break down - again, contact your epoxy manufacturer or read the manual that came with it.
