I recessed my cockpit per the plans in Nick's book. Look on the page opposite the offset table for the cockpit and recess offsets. (They're in there!)
If you don't put in the recess, the coaming is higher--a lower coaming height makes body maneuvering and especially rolling, easier.
Does adding a recess make stripping the coaming easier? Not a whole lot. It would be easier, yes, but you also have the added hassle of cutting, then stripping that recess.
Definitely add it for performance--as far as adding it for ease of building, it's probably a wash.
