A 'skin-on-frame' type of boat that has not been mentioned is the Geodesic Airolite boats. A materials kit and plans will set you back about $120.00, and all you have to do is supply the wood for the frames and the strongback. A simple design, and a unique boat (that is unbelievably light). You get to do some woodworking, and the non-wood parts of the boat are simple and quick.
