First-Time Advice

For some reason I feel compelled to build a kayak (probably from drooling over all the pictures of kayaks posted by guys like you). I'm thinking of an Osprey Triple by Pygmy. I have some carpentry skills (I built a kitchen from sticks once). Is this too ambitious a project for a first-time kayak? I've been looking at the S&G projects posted at various web sites and it all seems straightforward. But, I also know that when concept meets reality.......
Anybody have any thoughts on this? Should I try a less ambitious project like a "kid yak" from Glen-L first or should I jump right in. Any thoughts would be greatly appreciated.
