I have a Coho I have paddled for about a year and I love it. I am now building a Tern.
When I went out to Port Townsend and selected my Tern as the next project I also test paddled the Osprey Standard. Great boat but it tracks like a train. Turning takes a lot of advanced planning and effort. (at least for me) The Coho tracks very well too, but it will turn responsively either flat or leaned.
My Coho came in at 39 lbs and holds a ton of camping gear. Sits low and just screams across the water at about 5 kts in a sprint.
Both boats are multi chined so you will have more steps involved in building either boat. Not harder, just longer process.
