I built my G18 last winter in an unheated garage, but I was able to glue one strip on each side of the hull at a time. I would typically glue two strips right after work, and then two strips about 4 hours later, before I went to bed. Two more in the morning before work if I was feeling ambitious.

Leave the weekends for other things or big steps like glassing or seaming. You don't want to get tired of building that boat!! ;)
