Selecting a plan

I am just completing a CLC Eastport Pram and have been bitten by the bug. Although I have a plastic Wilderness Systems Cape Horn (which is perfect for me), I am looking to build a strip built kayak. I like the lines of the Night Herron, but would be open to other suggestions.
I plan on using this on rivers and small lakes, as well as an occassional trip to the coast (Atlantic ocean). How close is the Night Herron to the Cape Horn, and is this suitable for me (180, 5'11").
Additional question, is mahagony a suitable wood for this type of kayak? I would like to build with mahagony accenting with ash.
