Twenty inches from the center or balance to the rear of the cockpit opening sounds a bit high. Nick's book says that distance should be 14-16 inches. I would recommend moving it forward, but I haven't built a Guillemot yet.
Either way, the consequences are not that drastic. If the cockpit is too far back, it will have a minor effect on the speed, but you won't have to worry about weathercocking, even in a hurricane. If the cockpit is a bit too far forward, it will probably make the boat a little more difficult to accelerate, and more of a tendency to weathercock. However, the problem is easily overcome with a little bit of ballast in the rear hatch compartment. It's amazing how only a half gallon of water slid to the rear of the boat can change the balance and overcome improper cockpit placement.
