Doug,
I ripped miles of cedar strips for a 31' trimaran I built. I used two 7 1/4" blades mounted on the arbor with a 1/2" spacer between them. The blades were just standard carbide blades from the lumber yard (24 tooth if I remember correctly). For a kayak run 3/4" thick stock through with a 5/16" spacer giving you a 1/4" wide strip after allowing the "overhang" or set of the tooth. Don't try this by yourself, have some on the outfeed side to support and gently keep pressure up against the rip fence. Make a wide push stick to allow you to push the stock through and fingers away.
