I used Awl-Brite Plus (made by U.S. Paint, if I remember correctly) on the recommendation of a local kayak shop. Betsie Bay Kayak uses Awl-Grip white 2-part paint on the hulls of their production stitch-n-glue kayaks, and their finishes hold up as well as a gelcoat. When scratched, the Awl-Brite whitens, similar to varnish, so scratches still show up, but aren't as deep. My roll-on-and-tip-with-a-brush job didn't turn out as nicely as a varnish job, but since you have access to spray equipment, you should get an awesome finish.
Another option would be Sikkens one-part moisture-cure urethane. I got 500ml from Noah's marine, but haven't tried it yet -- been meaning to test it on a couple paddles. Chemically it's similar to 2-part, but cures with moisture rather than a catalyst. It comes with a thinner, so it should be sprayable, too.
