You can probably get away with epoxying, but to be on the safe side, I would just hold off until you can be sure the moisture will be under control. Once the threat of more water coming is has diminished, open the windows or get a dehumidifier. Let things stablize for another couple days and then start your epoxy work.

Too much humidity can cause blush with some epoxies. Changing humidity levels can change wood dimensions and cause annoying problems. The time wasted now will probably be worth the effort saved doing it later.

If it doesn't look like the conditions will ever improve, go ahead and start working, just be aware of the potential problems and do your best to minimize them.
