On my Chesapeake 18, I cut out the coaming pieces, stacked them up and put two thin screws thru the stack. Then I sanded them all to the same size, shape and smoothness with my Shopsmith disk sander, took them apart and laminated them.

Only a tiny bit of finish work was needed after they were laminated onto th kayak.
