I built cane seats for my strip canoe and a carved foam seat for my kayak. It is quicker to carve a foam seat and it will fit you and the kayak better. If you really are set on a cane seat, build the foam seat first so you can paddle while you make the seat. Use the plastic cane, natural cane will strech too much around water. Gil Gilpatrick's book "Building a Strip Canoe" give good instructions on weaving cane.
