I think he's arranged the steering axis relative to the center of lift such that any tipping of the machine yaws the foil, providing an angle of incidence on the correct side to provide a restoring force. I wonder if he would have more positive stability around the neutral point if he used a trim tab arrangement instead of twisting the whole foil?
This stinks; I've got a lot to get done today and now I'll be thinking about this!
