Satin varnish is generally gloss varnish with some solids added which dull the surface. I find satin finishes tend to dull the appearance of the wood as a result . Consider using gloss varnish and rubbing it with steel wool to cut the gloss. I think you will find the finish looks better. Realize that some of the UV protection comes from the reflectivity of the glossy surface and a satin finish will have less UV protection.
