I have the same boat, am 5-10 and 190#. I used a "creature comfort" seat in my Cape Charles. As it is velcro'd to the floor I can adjust the backrest by simply pulling the seat up and moving it. The back rest rests against the coaming. I find that I only use the back rest when relaxing. I tend to lean forward a little when paddling, especially paddling hard.
