Take a look at the plans offered from Clark Craft. Their hartley 14 is about 14 feet long, and 29 inches wide. It is plywood over a timber frame, and supposedly very easy to build. Here is a URL to the webpage of their catalog which shows the boat.

There is alos a canvas covered boat they call a touring kayak, also 14 feet long and 29 inches wide

Clark Craft shows pictures of both of these being paddled as doubles with a large single cockpit.

While we are in the canvas covered mood, there is also a 15 footer with a 30 inch beam and the same style of long, open cockpit. This one is called a double.

While you say you are not looking for a touring/ocean oriented" boat, please consider boats that are advertised as such. In my reading I've found that kayaks tend to be lumped into two general categories by most writers (including copywriters for catalogs) Those categories would be whitewater kayaks and sea kayaks. The whitewater kayaks are small, highly manueverable, low volume boats designed for playing in water that is rapidly going downhill. Everything for water that is reasonably level (give or take a few mountainous waves) seems to be called a sea kayak. Other boats that would fit your description might be listed as duck boats or sneak boats or sneakboxes.
