It sounds like a pretty tight fit to get the finished kayak out the door and into the hallway. Might it not be a good idea do draw out the floor plan to scale on some graph paper and then cut out a side elevation of the boat at the same scale. (I suspect that most kayaks will squeeze through a space like this better layed over on the side than in a normal upright paddling position.)
