I do almost all my work at temps over 24deg c and often up to 35 deg C the prime thing is to use a hardner that allows a longer pot life and if it is realy hot wait until evening to do critical work.

Humidity swelling the ply is of no concern as long as it stays below 25% RH

Epoxy will not be affected by the humidity.
