I don't think Noah's sells S & G kits, for the most part.
There are a couple of kits, but the rest are mostly 'material packages', I
believe. I bought the package for the Osprey Triple. It contained
6 1/2 sheets of plywood, fiberglass, epoxy, footbraces etc etc.
You have to do the lofting and cutting yourself.
It's still a very convenient way to go, and appears to be quite a bit
cheaper than scrounging up the materials piecemeal.

Actually, the double package is just about enough material to build two
singles. I think you could build two Chesapeake 16s from it.
About the only things you would need are sheer clamps and nails.
