I hope that I can help some with your question. I had the same type of cocern when stripping mine. First of all, my boat has internal stems, and I found that in order to correctly bevel both the strips and the stem to the proper angle and still have some stem left nearly impossible for my tiny mind. So this is what I did....you may or may not choose to try this at home...I beveled my internal stem and chose not to bevel my strips, after all my strips were attached I sanded them flat (perpendicular to the keel) I applied a steam bent black walnut external stem. Its all very nice to look at. For very good pictures of this check out Ted Moores' book "canoecraft". Seriously, I thought beveling the strips a terrible waste of time, the final radius of the stem of the boat should be around 1/2 inch anyways just be able to get the glass 'round it and also to avoid torpedoing someone, and if you attempt to round over the beveled strips you get garbage and have to attach an external stem anyways. my .02
