Hi howdy Kyle,
I built myself a Chesapeake Light Craft,"Cape Charles 18". (I'm a little larger than you.) If you want an easy boat to build, CLC has several stitch and glue models. I'm sure you could find one to suit your needs.
You might start though, by scrolling all the way down on this page, and exploring some of the links there. Nick has done a fine job of putting information just a click away.
You could also just do a search on "kayak kits". You'll get more links than you can read in a day.
