I am currently completing my first strip built kayak, a guillemot costal. It has been a great project! The plans from Nick are great, and having the book as a supplement, you should have no problem.
I would recomend buying the plans from Nick instead of lofting from the offset tables in the book. It's well worth the investment.
The project has taken me 400-500 hours, but I work slowly, and I would only rate my woodworking skills as average.
