I did the deck of my MillCreek with 1-1/2" strips, alternated with 1/2 strips. It came out fine, *but* I had not compound bends to deal with. It was just straight lays. If there is any side to side bending, a wide strip will not cooperate. It will make the bend by buckling, which is most unpleasant for a pretty kayak.

I don't see how you'd really save any weight, as wood density is the same, regardless of how it's cut. You'd use a little less glue, that's all.
