I once came across a website for Paper Boat Construction(can't remember the URL, but you should be able to find it by surfing). They use kraft paper(the type of paper used for grocery bags - it's the strongest grade available), and GLUED the layers together with Titebond, or similar woodworking glue. The last layer gets several coats of varnish and/or epoxy. Sounds interesting and funky.
