I agree with Nolan on the potential for disaster with either a router or a laminate trimmer. I've had good results using one of those nice Japanese pull saws to trim the overhanging deck close to the line and then finishing up with a sharp block plane. If you're planning to round over the hull/deck joint, you can do that with the block plane followed by some sanding.
