Different epoxies have different compatibility characteristics. The best bet is always to test your varnish with your epoxy. I have used a wide variety of varnishes on a wide variety of epoxies and have yet to run into any problems, however, I know of people who have had problems.

The longer you let the epoxy cure the better your chances of success, but I talked with someone who experimented with ZSpar Captains varnish on wet West Systems epoxy. He said it worked fine.

I would go ahead with what you want to use and see what happens, chance are pretty good it will work fine. You may end up having to sand it off but...
