I have used a heat gun to remove glass and epoxy on a wee lassie deck (quite a bit smaller than a kayak deck). Start at one edge, cut the glass where it won't show too much, and start heating. The bond with the wood will release, and you can strip off the glass. Keep moving, and I think (in retrospect) that a respirator would be a good idea. The little deck that I re-covered was not that bad a process, never fun to re-do a mistake, but not horrible.
