: Ive heard from someone that has done a lot of varnish work that you dont have
: to sand between coats. If you get a good coat down without runs sags
: streaks that you dont have to sand. What do you think?

It depends on the type of varnish you're using. And the level of final finish you want to achieve.
Read the label on the can, if it says 'do not sand between coats', don't. These are usually PU based varnishes, technically a plastic coating, and most plastics don't take well to sanding.
The traditional type varnishes do require sanding between coats. It's better to do many light coats, sanding between each. It keys the surface and gets the surface level easier.
I've seen some beautiful varnish finishes on boats, enough to make one wary of using the boat.
