Much faster doing a varnish job if you never have to sand out runs, drips etc. It's been several years and many projects since I had to wait for days for the varnish to completely dry to allow a run to be sanded out. Sure the thin coats don't cover as much as a full coat, but they also minimize problems and dry completely overnight allowing another coat the following day.
