I wet sand every coat after the first couple, even if there are no runs, drips or holidays. I've had more problems with thin coats than slightly thicker but wet coats. and I've never had a problem with drying time. In my shop, with my climate, brand of varnish and technique ... thicker wet coats have worked better than thin ones ... despite being contrary to conventional wisdom. I guess I'll always be the contrarian!
