Hi,
Have a look at David Payne's kayaks - he does a multi-chine ply K1 (as well as TK1, plus I think he does a strip K1). His K1 is 5200mm long by 510mm wide, and apparently a fast boat. He's designed a lot of race-winning sailboats and classic craft in Australia.

I am about to start building the Marathon TK1 (a bit more stable for me) and the plans are easy to read with full-size mould station templates. His designs aren't true S&G as they're built on forms and longitudinal stringers, but if you got the panel shapes right you could probably do it S&G style, but I think his approach is a good one, just like larger boats.
