Off Topic: Performance Plastic Boat Suggestions

I am helping a Friends son pick a good plastic boat. He is a motorcycle racer and does cross training by running and bicycle riding. I took him kayaking with one of my wooden boats, in rough water conditions, and he likes the sport. He does not have the interest or time to build a wooden boat but he does want to learn quickly with a boat he will not outgrow. I know every boat is a compromise but I think a British style kayak is a good choice for the intended use which is: Inland lakes and rivers in all conditions. There will be lots of rescue training, rolling practice, and seeking out of wind and waves.This young man is about 6'2" 180# athletic type.

I have chosen a few examples of boats that I think would fit his needs:
Necky Chatam 17, Wilderness Systems Tempest 170, Valley Aquanaut. Any suggestions or comments on these poly boats or any other you suggest, are appreciated.

Also, I can't seem to find Lightning Paddles anymore. Are they out of business? Any suggestions on a good, strong, and light paddle for this person?
