Wooden Boat Magazine has a special issue on small boats out right now that has 20 designs (not all sail) with reviews, photos, and contact info for the designers. I am particularly taken with the Weekend Dingy by CMD, available as a kit or plans, but there are lots of others. Free plans are all over too, check out:

stevproj.com for the mini cup (free) and their line of pocket cruisers.

Good luck with your venture, it will be harder than trying to decide what kayak to build.
