The amount of skeg in the water will affect performance differently. I wanted to send you a couple pages from Hutchinsons book which shows how deploying the skeg works in a beam wind but I've not gotten to it yet. It's overly simplified but in nutshell a kayak with no skeg weathercocks (turns into wind). With skeg fully extended the lateral resistance is moved too far aft and the kayak turns down wind. With skeg partially deployed the lateral resistance is moved enough to balance the wind and the kayak tracks straight. At least that's the theory. Since you are already making a retractable skeg I guess you don't need convincing. Good luck
