Removing old fiberglass

I have the chance to get a very old wooden Old Town canoe that has been in the family for many years (and we got it used!) About 40 years ago, my father
covered it with a very coarse weave fiberglass cloth and resin on the outside and 2 part paint on the inside.

I'd like to restore it. Any ideas, web resources or good thoughts on how to remove the glass/resin and two part paint without generating a lot of itchy and toxic fumes? I apologize for straying from the kayak topic area - if this is not worth a discussion thread on the forum, perhaps someone can point me in the right direction with a direct e-mail.
