When you say S&G, I asume you mean Stich and Glue? As far as books go, The New Kayak Shop is GREAT! The original, The Kayak Shop, dealt with "tortured plywood", not a fun process. Stick with the "New" book.

As far as your cherry plywood, is it marine grade? exterior grade? or for interior use? You really should stick with marine grade plywood because of the special glues and the void free laminates. Exterior grade is doable, this stuff has the same glues, but is not made to the same void free standards, not that you can't use this plywood just not as good. As far as interior grade, I don't think it'll work, but who knows, enough epoxy and maybe.....
