I built a Redfish Silver for my wife using two layers of 3.2 oz cloth with MAS epoxy. The cloth requires very little fill. In fact, trying to squeegee excess out of the cloth after wet-out was mostly a waste of time. I probably only removed an ounce from the hull layers but pushed microscopic bubbles throught the weave. In comparison, squeegeeing six ounce open weave on previous boats yielded a tub full of foam filled resin.
I used a seal coat, applied each layer separately, and put on fill coats as fast as possible. I used rollers to apply the resin.
I like the results and will probably use the same process in the future. I also liked working with the 3.2 oz cloth.
