I have built many boats using both methods. I agree with others that the plain hull is faster built with bead and cove, but when it comes to detail work on the deck, which most of my boats have been, it is just as easy to use square edge and plane edges to fit. It also depends on what design you are building. If the deck is fairly flat, planing edges is easy. If it has a harder chine surface, greater care is taken. It you are using thinnner strips for fine detail, it will be impossible to cove the edges anyways.
