I'm looking at doing the same thing! Here is my 2 cents:
After building the hull S&G, I was going to build a strong back of sorts using the offsets provided in Guillemont's book and measurments taken directly from the S&G hull. (Perhaps build the strong back before gluing the hull up and using it as a form there as well.) I'm sure there will be a bit of 'off the cuff' cutting and 'eyeballing' the lines but, that's half the fun of making something. In the end, it's really yours.
Once the strong back is made and everything looks straight and fair, it's just a matter of figuring out how to lay your strips.
Joining the deck and hull with glass tape seems to be the easiest and plenty strong.
Adding enough forms under the deck to make a nice designe with the strips would be cause for considerable weight. I wouldn't leave any forms except for the two bulkheads and maybe a strip under the cockpit. (I'll be using carbon fiber in various places to re-enforce mine)
