When I made my guillemot s&g, I thought of the little twisty bits of wire as a whole bunch of mini clamps. I tweaked and untweaked them to pull the panels into shape. Really usefull for fine tuning (except at points where indecision resulted in metal fatigue, but they are easy to replace).

The down side is that there is a while when your kayak resembles a porcupine and you get spragged near half to death, but that stage passes and it just gets sweeter and sweeter.
