S&G: Fiberglassing the inside

I'm building the Guillemot S&G right now and was wondering how important is the inner layer of 6oz cloth? With this being 4mm plywood and quite rigid with just the tape down, do I realy need the extra weight and strength of an inner layer?
The kayak is going to be used for mostly day paddles and weekend trips on fairly flat water. With this being my frist kayak, it probobly wont see big surf or a bad squal.
If the strength isn't that critical, I'd prefer to save the few pounds. BTW, how much weight am I talking about with 6oz cloth and the epoxy required?
