I have grown a healthy distrust for bungee cords for transportation of kayaks and panels. I now rely on those cheap and long nylon straps that one fastens with a buckle to the panel's width: safety without any slack. On the sometimes bumpy road to kayaking & wedding those bungees could stretch and snap back and bang your wood against the car's steel.
I twisted a kayak recently that way.
May be found for around $1 apiece I guess.
Dr Freud says the best trick if you're afraid to fail is to figure this is just a first try, and you'll do the real thing at a later stage, and keep in mind plywood is cheap matter you can replace. Scrapping one piece or two is part of the game.

: OK, first step is getting the Okoume home from the beach. Since I need a
: couple of sheets of construction grade plywood anyway for various setup
: purposes, I was thinking of getting two sheets to carry down in the truck.
: I can sandwich the Okoume between them and use a combination of bungees,
: clamps, bricks, rope, or whatever to keep it held together. Does that
