Material: Wire for stitching

I'm sure this has been addressed here before but a quick search didn't show up anything and I've got tax returns to prepare - can't be reading through old kayak message board emails (as much as I'd rather be doing that.)

What gauge wire should I use for stitching and how long should the individual pieces be? The Olympics are almost over, but I figure we can be cutting pieces while we watch what's left of them. And it should be copper, is that right?
