The run out should not be a problem structurally as long as the strips are not being required to bend too much on the deck as they may split. But of course this will likely happen as you build which means you can discard and replace. Things may look a lot differnet once you apply resin though, so wet it down and see what it looks like. With different grains, I usually like to cut and separate the different colourso f wood to create a pattern from the smaller pieces. Full length strips often have different grains and colour in their overall length. Figure a patttern that works for you.
