I built a hybrid Mill Creek 16.5 last winter (S&G hull with strip deck). It should work for your application. I have transported it on the roof of my Ford Probe. You will need a very good roof rack for the Escort due to its short roof line. I set mine up with three seat locations so it can be used as a double or (with the seat in the center location)as a single. Had no problem with 20mph winds with me and the dog.
