Epoxy: 2 questions: best epoxy & carbon fibre coaming

This is a two part question
1. I am sure it has been debated to no end on this site but I haven't been able to find any threads. I am wondering what the best epoxy is and why. This is my first experience using epoxy so I have no point of reference. West is readily available near where I live but I have read lots of good things about Raka on this page. Please help as it is now time to order my epoxy and glass.

2. I am building a Guillemot and was thinking about trying to cover the entire cockpit recess and coaming with carbon fibre and then regular glass over the whole thing. My reasoning for doing this is mainly cosmetic ( I think it will look cool and I am not completely happy with how the recess turned out) the other reason is that I am not a small guy (6'4" 240lbs.) and a bit of extra strength would probobly be good. Has anyone done this before? Pics would be great. Am I going to have a hard time making the carbon conform to the coaming lip?
